Making New Year Cookies

Have been spending most afternoon after work and weekends baking cookies. Never bake so many tins of cookies in my life. Usually I would bake a tin or two of pineapple tarts with store bought fillings. This year I manage to make a batch of pineapple fillings. Though not as good as store bought ones, they were made with a lot of patience...and a dash of love. I also made tins of green peas cookies in which I cut down on the sugar...I found the original recipe produce a high sugar content cookie. I saw a blogger, Vivian Pang  highly recommending her chocolate cookies. She adapted and slightly modified the recipe from Wendy, another blogger. So I went out, bought the ingredients and managed to make a couple of tins. Thanks to both of them, I have another type of cookies to bake....instead of my usual London Almond cookies and pineapple tarts. The cookies got positive comments from my food tester.
Why do I bake so much cookies? There are reasons....one of which is to present to people who have help my kids meaning also me in one way or another. It is difficult to show our gratitude to people who show us kindness.............the only way is to give them some tins of home bake cookies. Store bought ones are common. Better to give something one made, that is of course if one is a good baker. Not to boast....I think I am good at baking. I have never failed in making cookies (so far so good) nor making cakes. My cakes will turn out exactly as  in the recipe.
So have to stop blogging and start baking again.   :D It is tiring but worth the effort.
